Gluten Free Cheese-y Broccoli Bites
Cheese-y Broccoli Bites – if you’re craving a savoury treat, but trying NOT to load up on carbs… these Cheese and Broccoli Bites will hit the spot! AND they are gluten-free.
We had to stop ourselves from eating them all straight out of the oven!!
Makes: about 20 (depends on the size of your balls!)
Prep time: 10 mins
Cooking time: 25 mins
Ingredients:
- Coconut oil spray
- 2-3 cups par-cooked and frozen organic broccoli1 florets, thawed and chopped
- 1.5 cups grated organic cheddar, parmesan etc
- 3 eggs, beaten
- 1 cup flour – I think I used almond flour for these
- 1 tsp dried oregano
- Pink Himalayan sea salt
Method:
- Preheat your oven to 190 degrees C.
- Line a baking tray with paper and lightly spray with coconut oil (or olive oil).
- Combine all the ingredients in a bowl and mix well. It won’t look pretty, but that’s ok.
- Roll the mix into bite-size balls and place on the tray
- Bake for 25 mins or until golden brown. I turned these halfway through to get a nice browning on both top and bottom
You can store these in an airtight container in the fridge for 4-5 days (if they last that long!). You can also freeze them to pop into school lunches – winning!
